I tried 5 Kourtney Kardashian Poosh-approved recipes and here are my thoughts

Whenever I find myself a break (rarely), I apply it to cooking or baking the occasional treat. On Poosh- the blog that Kourtney Kardashian owns and runs, there's an assortment of recipes that will satisfy any taste palette. Best of all, many of the meals, snacks, and desserts are healthy, which is a major vibe, as I want to eat as healthy as possible.

With inflation at its unbearable peak, attaining nourishing food, especially when you're on a medically-induced strict diet (and 90% vegan), can be challenging. So, I shop around for the best sales, often Target because I worship it, and my local Jewel as that's my second job, and soon enough, I have everything I need to keep my health in top nutritional shape and create the Poosh recipes.

As a challenge to try new dishes, I opted to do some Poosh ones. The recipes range from simple to more professional, and while cooking or baking them, I found the process enjoyable.

I chose five recipes from Poosh that I loved creating. With minor modifications, they satiated my palette and filled my stomach.

The Health Nut-inspired salad dressing

Salads are among one of my favorite meals to assemble and make. The crisp vegetables, the vegan cheese enhancement, and finishing it off with a good dressing to incorporate all the flavors. It's a perfect mood enhancer, coupled with the fact that salads are healthy when made with veggies and fruits.

I try to have a salad daily, even on vacation, as they're filling, nourishing, and delicious. They're also the perfect complement to the main course.

Since I like making my own dressing as opposed to store-brought, I'm always Googling dressing recipes. A few years ago, I came across the Health Nut dressing recipe from Poosh and I have using it on rotation. It has simple ingredients, including Apple Cider Vinegar, garlic, and onion powder. For a touch of cheesiness, I add nutritional yeast. I blend everything in my Blendjet and pour it on my prepped salad. The results are nothing but superior.

Asian-Inspired Chickpaa Salad

You can't have salad dressing without the salad, and the Asian salad with chickpeas is a must meal. Not only is it bursting with vibrant greens and bright oranges, but it's filled with antioxidants, immune boosts, and digestive restoration- all beneficial to our health.

I like to add cucumber and a squeeze of lime juice for that extra crunch and flavor enhancement. Then, I use a a tablespoon of La Choy noodles, as they go with the chickpeas.

Hot Pink Pasta with beets

I'll be level with you. I love pasta and everything about this absolutely marvelous food. I also love beets, so what I read about the Hot Pink Pasta made with beets, I had to try it. Kourtney adjusted her recipe from PlantYou, a highly popular Vegan brand with plenty of pasta recipes.

Much like Kourtney, I added a few tweaks to mine, including a touch of nutmeg, pepper, sage, and thyme. For the milk, I substituted it with cashew and sprinkled my special vegan parmesan cheese on top for an authentic pasta dish. As for the noodles, I used Banza's chickpea rigatoni for added protein, as the recipe doesn't have much.

The pink pasta turned out to become a favorite and I'll definately be cooking it up again.

Kendall Jenner's brownies

Everyone loves brownies and I'm no exception the rule.

For a birthday dessert, I gave Kendall's brownies a chance. I did wind up using regular flour and sugar for the cookie dough, then I subtracted less sugar, added more chocolate to the brownie batter, and omitted the walnuts. I don't like anything overly sweet, so my adjustments didn't affect the flavor notes of this decadent dessert.

Even with the edits, the brownies turned out amazing.

Kourtney's rice krispie treats

The last recipe I tried was Kourtney's infamous rice krispie treats. Growing up, I loved making these cereal-based snacks with my mom. Back then, we used regular marshmallows and cream butter in the recipe.

Kourtney's version contains vegan marshmallows and butter, which give these treats a healthier fare. While melting the marshmallows, they didn't melt as smoothly as their regular counterparts, but by adding a tablespoon of water, the little guys dissolved better. The end result was a crunchier version with a hint of the vanilla, harmonizing its neighboring ingredients.

There are several other recipes on Poosh that I'll be trying, and hopefully, they'll live up to my expectations like the ones above.
